This is a gluten-free and vegan pudding that works well if you are looking for a lighter type of dessert. A really quick recipe to prepare and satisfy the sweet tooth while still benefiting from the goodness of the Chia seeds. Chia seeds are a superfood packed with antioxidants, fibre, iron and omega 3 necessary for digestive and brain health as well as boosting energy, lowering cholesterol and fighting inflammation.
You can use non-dairy milk of your choice to suit your own taste and it includes cocoa powder and dark chocolate for a chocolatey twist. Himalayan rock salt is definitely a healthier choice over your regular table salt, as regular salt is highly processed while Himalayan salt contains natural elements and minerals such as magnesium, potassium and Iron vital for bone strength, energy and blood sugar regulation. The guideline for the amount of honey is 1 tablespoon but again you can use more depending on how sweet you want it. This is one recipe that allows you to measure the ingredients to satisfy your own taste buds.

Ingredients
- 1 1/4 cup coconut milk
- 1/4 cup chia seeds
- 3 Tablespoons cocoa powder
- 1 Pinch himalayan salt

You will need a large glass jar with an airtight lid. Place all of the ingredients together in the jar and stir. Secure the lid on top and shake well until its well mixed. Place in the fridge for 4 hours or overnight until the mixture becomes quite thick and pudding-like, stirring or shaking ocassionally.

Top with dark chocolate and any extra toppings you may like, such as fruit, dessicated coconut or whipped coconut cream. Enjoy!
