Savory Oatmeal and Soft Cooked Egg

Savoury Oatmeal with eggs is a recipe that gives a slightly different twist to the usual way that oatmeal is eaten as breakfast. I love to eat oats for breakfast and I love to eat eggs for breakfast but never combined together so I wanted to give this recipe a try and I was pleasantly surprised.


Oatmeal in general is a fantastic way to start off your day and keep you full until the afternoon. Oats are high in fibre and protein giving you energy, benefiting your digestive system and great for weight loss. Eggs are also a good source of protein and help to fill you up also. The cheddar cheese and scallions add to the savoury taste of the recipe. Himalayan Pink Salt helps in balancing your body's pH I added a tablespoon of raw honey as an option as I usually like sweetness in my regular oats so it worked well for me in this recipe too. This will all depend on your own personal taste.


Ingredients

  • 1 cup of filtered water
  • 1/2 cup rolled oats
  • Himalayan rock salt and ground pepper
  • 1 large egg
  • 2 Tablespoons cheddar cheese shredded
  • 1 Tablespoon thinly sliced green scallion
  • Optional: 1 tablespoon raw honey

    Instructions

    1. Pour the cup of water into a saucepan and bring it to a boil. Add the oats and pinch of salt and pepper. Give a little stir and reduce the heat, letting it simmer for 5 minutes.

    2. In a non stick frying pan heat coconut oil or other oil over medium heat. Gently add the egg and cook for 3 minutes, making sure the egg is still runny.

    3. Place the oatmeal in a bowl. If you would like to add some sweetness, then stir in the honey and top with the cheese, egg and scallions. Enjoy!
