Nutrient-packed delight: Quinoa Salad 🥗
A refreshing quinoa salad that's both wholesome and flavorful. Made with fresh vegetables and the goodness of quinoa, this salad is a must try !!
Ingredients:
1 cup quinoa
2 cups water
1 cucumber, diced
1 bell pepper, diced
1/2 cup chopped fresh parsley
For the dressing:
3 tablespoons olive oil
1 tablespoon freshly squeezed lemon juice
Salt and pepper to taste
Instructions:
1)Rinse quinoa in a fine mesh strainer and add it to a pot with 2 cups of water. Bring to a boil, then reduce heat to low and simmer for about 15 minutes or until the water has been absorbed and the quinoa is tender.
2)Remove the quinoa from heat and let it cool to room temperature.
3)In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
4)In a large bowl, combine the cooled quinoa, diced cucumber, diced red bell pepper, and chopped fresh parsley.
5)Pour the dressing over the quinoa salad and toss to combine. Serve and Enjoy
