Gluten-free oat flour pancakes are simple, quick, easy to digest and bursting with flavour. These pancakes are filled with bananas and chocolate chips that will brighten up your breakfast table. I used coconut oil instead of regular vegetable oil as coconut oil naturally boosts our immune system and is rich in anti-oxidants with antibacterial and antiviral properties helping us to fight off those nasty colds and infections.

The banana, vanilla and cinnamon give the pancakes a scrumptious taste as well the chocolate chips for all the chocolate lovers. This healthy recipe requires little time in the kitchen and will keep you fuller for longer.
Begin by preheating your non stick pan over low to medium heat. Mix the oat flour, sugar, baking powder, salt and cinnamon in a large bowl.
In a seperate bowl whisk together the milk, egg, oil and vanilla. Add the wet ingredients to dry ingredients, then add the bananas stirring well. Finally stir in the chocolate chips.
Brush the pan with coconut oil, then drop 1/4 cup of batter to pan. Cook until bubbles start to form and then using a spatula gently flip over. Cook until both sides are golden brown
Time to serve up and enjoy!! Pour some honey on top for extra sweetness and place any left over chocolate chips you may have or some banana slices.
